To answer Erik's question...for me I'd rather use my freezer space in other ways and since dehydrated vegetables still have the nutrients because it isn't cooked...I just like storing mine on a shelf. Yum yum.  I made it as directed, but with fresh carrots and onions because I had them on hand, and chard from the garden instead of celery.
